Red cabbage red is a water-soluble natural anthocyanin colorant. It is red to purple-red color at acidic conditions and is stable to light and heat, blue at neutral conditions, and green at alkaline conditions. It is sensitive to some metal ions and not stable under alkaline conditions. It is permitted to be used as a food colorant in EU countries according to European Regulation 1333/2008/EC.
